Carrot Ginger Dressing Salad

This has become one of my favorite meals, and this dressing is SO tasty is a crime. The dressing so delish and fresh. I use the Gardein chickenless crispy fingers as a topper, and it makes this salad not only delicious but filling, and full of protein. This recipe makes two large salads (photos show only one, and to make a single serve just divide the recipe), if you use this as a side dish for lo mien style noodles it could easily serve four, or one large salad makes a hearty and healthy meal.

What you need:
For Salad Dressing (this should yield a cup or more of the dressing):

Cheese Grater
Hand mixer
1-large carrot grated
2 tablespoons freshly grated ginger root (yes this will be wet and pithy)
1 teaspoon brown sugar
1 Teaspoon lemon Juice
3 tablespoons of water
2 Tablespoons apple cider vinegar
2 teaspoons soy sauce
2 teaspoons sesame oil
Salt (to taste)
Dash of garlic powder
Chow Mein Noodles

After all the ingredients are put together use the hand mixer and grind till it's a smooth as you think it's gonna get :) Place in a jar and refrigerate till needed. The whole amount should be more than enough for 2 large salads. If you are making only one salad you can save the remaining contents for another time.

For Salad contents, All are optional, but these seem to make the best flavor combinations"
A hearty amount of spring salad mix (any brand is fine) 
1 ripe avocado sliced lengthwise (optional)
4-8 tablespoons chick peas
1 one large tomato diced
1 cucumber pealed, seeded and sliced
one tiny can of mandarin oranges (drained)
6 Gardein Crispy Chicken strips (these are vegan and have no meat)
To prepare the Crispy Chicken strips coat each one with olive oil, and fry gently on each side for about 2-3 minutes till crispy on the outside and warm through. Then you can slice them up for the salad, strips or diced. 

These strips are really great, wonderful in salads, in a sandwich, or on their own with ketchup or BBQ sauce and french fries (for younger audiences). I have had a couple of my friends use these and tell me how tasty they are, and how happy they are that I introduced them to these products. The taste is so close to chicken it's stupid! Except these won't stick to your thighs... he he he. I included the nutritional facts. Now don't get me wrong I love chicken, but these come so close, I haven't craved chicken in ages.
