Black Forest Cherry Bars w/ cherry glaze: Pump up your Dome Part 4

What are you snacking on? Well whatever it is, this is better... JUST kidding, but it is REALLY tasty! I wasn't sure about it at first, so in usual Motherdome fashion I added a few little things.

This snack is a raw food approved protein snack, which yields around 25 bars of yummy goodness for your body. Each one is around 223 calories, but make no mistake this is better and tastes ALOT better than some Cliff bar (although I do like a good Cliff Bar).

These are Husband approved! We ate them like a dessert after dinner. They are very rich, nutty and chocolatey. I hope you love em' as much as we did.

What you will need:
Food Processor
Spatula
8 1/2 inch x 8 1/2 inch baking pan
Small bowl of water for soaking
3/4 cup pitted dates (soaked in water for 15 minutes
1 1/2 cup dried cherries (soaked for 15 minutes) NOTE: I used 2 cups of frozen cherries thawed and thourally drained, however dried fruits will always lend a sweeter taste.
1 2/3 cups almonds
2 tablespoons ground flaxseed (flaxseed meal)
1 cup cacao powder ( I used Hersheys all natural chocolate powder)
1/3 cup coconut oil
3 tablespoons xylitol (this again is a dietary suppliment, adding it will NOT increase the sweetness, and if you are breastfeeding or pregnant please consult your doctor first)

Step one: Soak the dates and dried cherries (if you used the dried cherries) 15 minutes then drain
Step two: Place all nuts in processor and grind to a fine powder, remove to a bowl and then mix in the coco powder, and flaxseed.
Step three: In processor add the dates and cherries with the coconut oil (and xylitol optional) and mix together till smooth.
Step 4: After add the nuts mixture slowly, use your spatula to scrape off any cherry mixture from the top of the processor and put back into the processor.
Step 5: Prepare the pan by taking a little coconut oil and greasing your square inch pan with it. Then take a little arrowroot flour (or rice flour) and pat it around till it coats the oil, this will make it easier to get the pieces out.
Step 6: place mixture (will be thick and sticky) into the prepared pan and pat it down.

Step 7 is the glaze, this part I made up. Mix a sprinkle of arrowroot or rice flour with 1/2 defrosted frozen or pitted fresh cherries, and add 1/3 cup raw agave to it, then blend together with a hand mixer, once it's done, pour it on top of the mixture and let it sit in your fridge uncovered overnight, or until topping is less liquid and bars are solid. Then take a tableknife, and divide into 25 bars.

These will keep in your fridge for 5 days, or frozen for a month!

Last Step ENJOY with someone you love :)
