Portobella Mushroom Burgers: Yup I keep em' comin'

Okay, I am not against a good red meat burger, but for a person who is eating primarily vegan dishes, this is not just tasty, but satisfying, and REALLY healthy! I didn't know much about mushrooms, other than I like em', but there are tons of healthy points for the portobella shroom. And unlike alot of foods, the nutrition of this food doesn't diminish when cooked! YAY!

This recipe is so easy, it hurts.

What you need:
Lettuce
1 large beefsteak Tomato
Mustard
Sliced Avacado (optional)
Sprouts (optional)
Vegan hamburger buns (basically this means just NO dairy or egg ingredients)
For those NOT going vegan (like my hubby) you can add some cheese or mayo
*If you ARE going vegan with this dish, you can substitute the mayo for my "Basic Nut Cheese" recipe found in another blog, very tasty!  The recipe makes ALOT of nut cheese, so if you only want to make a little I suggest halving or quartering the recipe for small dishes like this.

4 Large Portabella Mushroom Caps (take out any leftover stem. 

Olivia's Marinade:
1/3 cup balsamic vinegar
2 tablespoon Worcestershire sauce
5 Tablespoons dried oregano
1/4 teaspoon onion powder
a dash of garlic powder
2 tablespoons olive oil

After gently rinsing your Portabella mushrooms and removing remaining stem place mushroom caps in a nice pan that will accommodate all  of them laying on their backs (cap down).
Then pour the marinade or spoon it over them, getting a nice even coating on them, let the rest drain to the bottom, and let them marinate for 30 minutes to an hour before grilling (this just depends on your personal taste) Either way, you can't go wrong.

Get your oven ready 350 F, or use a grill mate, place the caps directly on a preheated oven or grill, or if using an oven use a pan with a grill tray or place caps directly on grill tray in the oven with something under to catch the drippings. Grill mates are a little faster, but will flatten the cap a tad more, not a big deal the taste is the same. If you feel like getting really fancy throw these on a real grill, for a nice smokey flavor.

You can easily eat two of these, or for a tasty side that is low in calories, but satisfying, try sweet potato fries, or cole slaw (recipe to come). 


How long to cook?  5-7 minutes on each side, or until nice and tender, with a meaty density.
